  • 0.5 teaspoon xanthan gum or psyllium husk powder Creates a better structure and helps bind the loaf.
  • 0.5 cup finely ground almond flour Use for added texture, optional.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a mixing bowl, whisk together the eggs and Greek yogurt until smooth.
  • Stir in the melted butter, baking powder, salt, xanthan gum, and almond flour until well combined.
  • Pour the batter into your prepared loaf pan.

Baking

  • Bake for about 30–35 minutes, or until a toothpick inserted into the center comes out clean.
