  • 1 pound beef or chicken, cubed
  • 4 cups broth (chicken or vegetable)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Toasting is recommended for better flavor.
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (thyme, rosemary, etc.)

Cooking Instructions

  • In a large pot, sauté the onions and garlic until softened.
  • Add the cubed meat and cook until browned.
  • Stir in the mixed vegetables and cook for a few minutes.
  • Pour in the broth and add the herbs, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for about 30 minutes, until the meat is tender and the vegetables are cooked through.
  • Serve warm and enjoy!

Notes

Got leftovers? This stew keeps well in the fridge for about 3–4 days. If you want to enjoy it longer, freeze it for up to 3 months. When reheating, just coax it back to life on the stovetop or in the microwave.
