  • 1 cup unsalted butter, softened Ensure butter is at room temperature for best texture.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 2 cups semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed peppermint candies Can substitute for toffee bits or dried cranberries.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix softened butter, granulated sugar, and brown sugar until creamy.
  • Beat in the eggs one at a time and stir in the vanilla extract until combined.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the dry mixture into the wet ingredients, mixing until just combined.
  • Gently stir in semi-sweet chocolate chips, white chocolate chips, and crushed peppermint.

Baking

  • Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes until the edges are golden.
  • Let the cookies cool for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container at room temperature for about 1 week or freeze for up to 3 months. Reheat in the microwave to regain freshness.
