Filling Ingredients

  • 1 Large Sweet Potato Peeled and diced
  • 1/2 Cup Black Beans Rinsed and drained
  • 1/4 Cup Corn Rinsed and drained
  • 1 Mini Red Pepper Diced
  • 1 Mini Orange Pepper Diced
  • 1 Tsp Jalapeno Diced - Optional
  • 1 Tbsp Easy Homemade Taco Seasoning Or store-bought pack

Quesadilla Ingredients

  • 4 Medium Flour Tortillas
  • 1 Cup Cheddar or Pepper Jack Cheese Shredded
  • 1 Tbsp Butter For pan frying
  • 2 Tsp Olive Oil Divided

Serving Garnishes

  • to taste Fresh Cilantro Chopped
  • to taste Lime Juice
  • to taste Your Favorite Salsa
  • to taste Sour Cream

Instructions
 

Preparation

  • Start by peeling and dicing the sweet potato. Toss it with a little olive oil, taco seasoning, and bake until tender.
  • Mix in black beans, corn, and diced peppers.

Cooking

  • Lay one tortilla in a hot pan, sprinkle half the cheese on one half, add your filling, and top with the rest of the cheese.
  • Fold the tortilla and cook until golden brown on both sides.

Notes

These quesadillas keep well in the fridge for about 3 days. Wrap them tightly in foil or plastic wrap. They can also be frozen for up to a month.
