  • 2-3 large large tortillas (whole wheat or gluten-free)
  • 2 ripe ripe avocados
  • 0.5 cup precooked black beans (rinsed)
  • 0.25 cup corn
  • 2 tablespoons diced red onion
  • 0.5 lime Juice of ½ lime
  • 1 clove garlic (minced) For deeper flavor, toast before adding.
  • 1 teaspoon cumin
  • to taste Crushed red pepper
  • to taste Fresh cilantro
  • to taste Sea salt and cracked pepper
  • 2 tablespoons Olive oil For cooking.

Preparation

  • In a mixing bowl, mash the avocados until smooth.
  • Mix in garlic, lime juice, salt, pepper, and crushed red pepper.
  • Fold in black beans, corn, diced onion, and chopped cilantro.

Cooking

  • Heat olive oil in a non-stick skillet over medium heat.
  • Spoon half the avocado mixture onto one half of a tortilla and fold it over. Repeat with remaining tortillas.
  • Cook each folded quesadilla in the skillet until golden brown on both sides.
  • Slice into wedges and serve immediately.

Notes

For a creamier texture, add nutritional yeast or vegan cream cheese. Variations include adding spicy jalapeños, mushrooms, or grilled zucchini.
