  • 6 oz Gnocchi Cook according to package instructions.
  • ½ cup Sun-dried tomatoes Chopped, packed in oil for extra flavor.
  • 1 cup Dairy-free cheese Use your choice of dairy-free cheese.
  • ½ cup Cream Dairy-free cream can be substituted.
  • 2 cloves Garlic Minced for best flavor.
  • 2 tbsp Olive oil For sautéing.
  • to taste Salt Adjust to personal taste.
  • to taste Pepper Freshly ground recommended.
  • ¼ cup Fresh basil Chopped, for garnish.

Instructions
 

Preparation

  • Press the tofu to remove excess moisture and cut it into cubes.
  • Heat olive oil in a pan and add garlic, cooking until fragrant.

Cooking

  • Add the tofu cubes and cook until crispy on all sides.
  • Stir in sun-dried tomatoes and dairy-free cheese, allowing it to melt and create a creamy sauce.
  • Cook gnocchi according to package instructions, then add it to the pan with the tofu mixture.
  • Season with salt, pepper, and fresh basil.

Notes

For an extra crispy tofu, toss in a bit of cornstarch before frying. You can add a splash of white wine for flavor enhancement, or use coconut cream for a richer sauce. Swap basil for parsley or oregano if desired. Add red pepper flakes for spice.
