Preparation

  • In a medium-sized mixing bowl, mash the avocado with a fork to your desired consistency.
  • Add the freshly squeezed lime juice to the mashed avocado and stir well.
  • Toss in the black beans, corn, red onion, and cilantro. Mix well.
  • Sprinkle cumin, chili powder, salt, and pepper. Mix gently to combine.
  • Warm tortillas on a skillet or in the microwave to make them pliable.
  • Lay a warmed tortilla flat, spoon 1/4 of the filling, and shape it like a log.
  • Roll the burrito by folding in the ends and rolling tightly from the bottom up.
  • Enjoy immediately while warm, slicing in half for presentation if desired.

Notes
