Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 eggs
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For Frying and Dusting

  • Oil for frying Use enough oil for deep frying.
  • Powdered sugar for dusting Dust generously before serving.

Preparation

  • In a mixing bowl, combine the flour, baking powder, sugar, and salt.
  • In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined — don't overdo it!

Frying

  • Heat oil in a deep pot over medium heat.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2-3 minutes.
  • Remove beignets from oil and drain on paper towels.
  • Dust with powdered sugar before serving.

Notes

These beignets are best enjoyed fresh. Leftovers can be stored in an airtight container for up to 2 days, or frozen for up to a month. Reheat in the oven at 350°F for about 5 minutes.
