Ingredients
  

Pasta and Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 8 ounces pasta (penne or fettuccine)

Sauce Ingredients

  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions
 

Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken breasts, season with salt and pepper, and cook until browned and cooked through. Remove the chicken and slice it.

Cooking the Sauce

  • In the same skillet, add minced garlic and sauté until fragrant. Then add sun-dried tomatoes and cook for another minute.
  • Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Italian seasoning, and cook until the sauce thickens slightly.

Combining

  • Add the cooked pasta and sliced chicken to the sauce, tossing to coat well.

Serving

  • Serve with grated Parmesan cheese and fresh basil on top.

Notes

For a lighter option, use half-and-half instead of heavy cream. Use fresh basil if available for better flavor.
