Ingredients
  

Marinade

  • 1 cup coconut milk Use full-fat coconut milk for creaminess
  • 2 tablespoons lime juice Freshly squeezed is preferred
  • 2 tablespoons soy sauce Low sodium soy sauce can be used
  • 1 tablespoon brown sugar Can substitute with honey for sweetness
  • 1 teaspoon garlic powder Adds depth to the flavor
  • 1 teaspoon ginger, minced Fresh ginger adds zest
  • 1 teaspoon red curry paste Adjust to taste for spiciness
  • to taste Salt and pepper For seasoning

Main Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces Can substitute with chicken thighs for juiciness
  • as needed Skewers Use if grilling

Instructions
 

Preparation

  • In a mixing bowl, combine coconut milk, lime juice, soy sauce, brown sugar, garlic powder, ginger, red curry paste, and a pinch of salt and pepper.
  • Add the chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes.

Cooking

  • Preheat the grill or oven to 400°F (200°C).
  • If using skewers, thread the marinated chicken onto them.
  • Grill or bake the chicken bites for 15-20 minutes, or until cooked through and golden brown, turning halfway.
  • Serve warm as an appetizer or snack.

Notes

Serve these bites with a side of lime wedges, a zesty dipping sauce, or fresh veggies for a colorful spread. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months. Reheat in the oven or microwave.
