Preparation

  • Heat olive oil in a skillet over medium heat.
  • Season the pork loin with salt and pepper, then sear it in the skillet until browned on all sides.
  • In the Crock Pot, add chopped onion and minced garlic.
  • Place the seared pork loin on top.
  • Pour chicken broth over the pork and sprinkle thyme and rosemary.

Cooking

  • Cover and cook on low for 6-8 hours or until the pork is tender.
  • Once cooked, remove the pork and let it rest for a few minutes before slicing.
  • Serve with the delicious juices from the Crock Pot.

Notes

For the best flavor, do not skip searing the meat. This enhances the taste and texture. Store leftovers in the fridge for 3-4 days or freeze for up to three months.
