  • 2 cups cooked chicken, shredded Use rotisserie chicken for quicker preparation.
  • 2 cups corn (fresh, frozen, or canned)
  • 1 whole red bell pepper, diced
  • 1 whole avocado, diced Add just before serving to prevent browning.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup cooked quinoa or rice Make sure it’s cooled before adding.
  • 1/4 cup fresh cilantro, chopped
  • 1 whole lime, juiced
  • to taste Salt and pepper

Optional Toppings

  • cheese Add as desired.
  • sour cream Add as desired.
  • hot sauce Add as desired.

Preparation

  • In a large bowl, combine the cooked chicken, corn, red bell pepper, avocado, cherry tomatoes, and red onion.
  • Add the cooked quinoa or rice to the mixture and stir gently.
  • Squeeze lime juice over the bowl and add cilantro, mixing well.
  • Season with salt and pepper to taste.
  • Serve immediately, or refrigerate for meal prep.
  • Optional: Top with cheese, sour cream, or hot sauce before serving.

Notes

This dish stays fresh for about 3-5 days in the fridge. For meal prep, mix everything except the avocado, then add fresh avocado before serving. You can also substitute chicken with grilled shrimp or make it vegan using jackfruit.
