  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 unit avocado, diced
  • 1 cup cooked rice (or quinoa)
  • 1/4 cup cilantro, chopped for garnish
  • 1 unit lime, juiced

Instructions
 

Preparation

  • In a large bowl, combine shredded chicken, corn, black beans, cherry tomatoes, and avocado.
  • Add the cooked rice or quinoa to the bowl.
  • Squeeze lime juice over the mixture and season with salt and pepper.
  • Toss everything together until well mixed.
  • Garnish with chopped cilantro and add optional toppings if desired.
  • Serve immediately or store in meal prep containers for later.

Notes

This chicken bowl keeps well in the fridge for about 3-4 days when stored in an airtight container. For long-term storage, freeze it for up to 2 months.
