Ingredients

For the Filling

  • 1 pound lean ground beef Can substitute with turkey or a meat alternative.
  • 1 oz taco seasoning Adjust to taste or substitute with cajun spices for variation.
  • 10 oz diced tomatoes and green chiles Canned, undrained.
  • 2 cups shredded cheddar cheese More can be added on top before baking.
  • 8 oz ranch dressing For creaminess; can experiment with alternatives.

Instructions

Preparation

  • Preheat your oven to 350°F.
  • Cook the ground beef in a skillet until it turns brown and is no longer pink. Drain off any fat.
  • Add in the taco seasoning and the diced tomatoes and chiles. Sauté for about 5 minutes until mixed and aromatic.
  • In a bowl, combine cheddar cheese and ranch dressing. Fold in the cooked taco meat until well mixed.

Assembly

  • Spoon the filling mixture into the frozen phyllo shells.
  • Bake for 8-10 minutes, or 10-13 minutes if the shells were frozen.

Notes

For best results, pre-cook phyllo shells for a minute to avoid sogginess. Keep an eye on them toward the end of baking to prevent burning. Serve on a colorful platter with fresh herbs and dips like salsa or guacamole.
