  • 1 pound chicken breast Skinless and boneless
  • 2 cups mixed vegetables Such as bell peppers, carrots, and zucchini
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper To taste
  • 4 whole wheat tortillas
  • 1 cup shredded cheese Like cheddar or mozzarella
  • Fresh herbs For garnish (optional)

Instructions
 

Preparation

  • Preheat your grill or stovetop pan over medium heat.
  • In a bowl, combine the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper. Mix well to coat the chicken.

Cooking

  • Grill the chicken for about 6-7 minutes on each side or until fully cooked and golden brown.
  • While the chicken is cooking, steam or sauté the mixed vegetables until tender.
  • Once the chicken is cooked, slice it into thin pieces.
  • Warm the tortillas on the grill or in a pan for about 30 seconds on each side.

Assembly

  • Assemble the wraps by placing some chicken slices, mixed vegetables, and cheese onto each tortilla. Roll them up tightly.

Serving

  • Serve the wraps warm, garnishing with fresh herbs if you like.

Notes

If you have any leftovers, place them in an airtight container and store them in the fridge for up to 2-3 days. When ready to eat, reheat them in the microwave or on the stovetop until warm.
