  • 4 pieces chicken thighs
  • 1 cup Marsala wine
  • 2 cups mushrooms, sliced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil For browning the chicken
  • Salt and pepper to taste
  • fresh parsley for garnish

Instructions
 

Preparation and Sautéing

  • Heat olive oil in a large skillet over medium heat. Season chicken thighs with salt and pepper and brown on both sides.
  • Remove the chicken and set it aside. In the same skillet, add onions and garlic; sauté until softened.
  • Add the mushrooms and cook until lightly browned.

Cooking

  • Return the chicken to the skillet and add Marsala wine and chicken broth.
  • Bring to a simmer, cover, and cook for about 25-30 minutes until the chicken is tender.

Serving

  • Serve over pasta or with crusty bread, garnished with fresh parsley.

Notes

For a healthier version, use skinless chicken thighs or chicken breasts. If you prefer a thicker sauce, let it simmer uncovered for a few extra minutes to reduce. You can add a splash of heavy cream for a richer texture.
