  • 1 teaspoon xanthan gum Omit if your blend already contains it
  • 1/4 cup tapioca starch/flour
  • 2 teaspoons instant yeast
  • 1 1/2 teaspoons granulated sugar
  • 1 teaspoon kosher salt
  • 9.5 ounces warm water About 95°F
  • 2 tablespoons extra virgin olive oil
  • Cooking oil spray

Preparation

  • In a bowl, mix the gluten-free flour blend, xanthan gum, tapioca starch, instant yeast, sugar, and salt. Stir well.
  • Slowly pour in the warm water and olive oil. Mix until a dough forms.
  • Lightly knead the dough until it’s smooth and stretchy - it should bounce back when pressed!
  • Cover the bowl with a towel and let it rest for about 30 minutes.
  • Spray a pizza stone or baking sheet with cooking oil. Spread the dough evenly with your hands.
  • Preheat your oven to 475°F (245°C) and bake the crust for about 10 minutes, or until it’s lightly golden.
  • Add your favorite toppings, then return the pizza to the oven and bake for another 10 minutes.

Quick pro tip: Don’t skip the resting time. It helps the dough develop that stretchy structure.
