  • 4 pieces chicken breasts Skinless and boneless preferred
  • 2 cups fresh spinach
  • ½ cup cream cheese Softened for easy mixing
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced Fresh is best for flavor
  • to taste Salt
  • to taste Pepper
  • as needed Olive oil for cooking Use for sautéing and drizzling

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, heat a splash of olive oil and sauté the minced garlic until aromatic.
  • Add the spinach and cook until wilted. Remove from heat and let cool.
  • Stir in cream cheese and mozzarella until combined and creamy.

Stuffing the Chicken

  • Using a sharp knife, make a pocket in each chicken breast and season with salt and pepper.
  • Stuff each chicken breast with the spinach mixture and secure with toothpicks.

Baking

  • Place the stuffed breasts in a baking dish and drizzle with a little olive oil.
  • Bake for about 25-30 minutes until the chicken is cooked through.
