Ingredients
  

Main Ingredients

  • 2 cups Fresh spinach Sautéed until wilted.
  • 1 cup Feta cheese Crumbled.
  • 1 cup Mozzarella cheese Shredded.
  • 4 pieces Whole wheat tortillas

For Serving

  • 1 cup Greek yogurt or tzatziki For dipping.

Optional Add-ins

  • 1 cup Mushrooms Sautéed, if desired.
  • 1 cup Bell peppers Sautéed, if desired.

Instructions
 

Preparation

  • Sauté fresh spinach in a skillet until wilted.
  • In a bowl, mix the wilted spinach, crumbled feta cheese, and shredded mozzarella.
  • Spread the mixture evenly over one half of each tortilla.
  • Fold the tortillas in half to enclose the filling.

Cooking

  • Heat a non-stick skillet over medium heat and cook the quesadillas for about 3-4 minutes on each side, or until golden and crispy.
  • Slice and serve warm with Greek yogurt or tzatziki and a simple salad.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for up to a month. Reheat in a skillet for optimal texture. Experiment with different cheeses and additions for variety.
