  • 2 pieces chicken breasts Boneless, skinless preferred
  • 3-4 pieces jalapenos, chopped Adjust for spice level
  • 1 cup heavy cream Can substitute with half-and-half for lighter version
  • 1 cup chicken broth Vegetable broth can be used as substitute
  • 1 tablespoon olive oil For cooking the chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • for serving Rice or preferred side

Cooking

  • In a skillet, heat olive oil over medium heat.
  • Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  • Add chicken to the skillet and cook until browned on both sides and cooked through, about 6-8 minutes per side.
  • Remove chicken and set aside.
  • In the same skillet, add chopped jalapenos and sauté until softened.
  • Pour in chicken broth and heavy cream, stirring to combine.
  • Bring to a simmer and let the sauce thicken slightly.
  • Return chicken to the skillet and coat with the sauce.
  • Serve over rice or with your favorite side.

Notes

Store leftovers in the fridge for about 3-4 days, or freeze for up to 3 months. Reheat gently on the stove or in the microwave, adding chicken broth if necessary.
