Soft & Chewy Peanut Butter Cookies

Ingredients
  

Cookie Ingredients

  • 1 cup smooth peanut butter See notes below recipe.
  • 16 tablespoons unsalted butter, room temperature
  • 1 1/3 cups dark brown sugar, packed See notes below recipe.
  • 1/2 cup granulated sugar
  • 1 tablespoon real vanilla extract
  • 2 large eggs, room temperature
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 2 1/4 cups all-purpose flour
  • 1/2 cup additional granulated sugar See notes below recipe.
  • sea salt flakes Optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large bowl, mix together the peanut butter, unsalted butter, dark brown sugar, and granulated sugar until fluffy.
  • Add in the vanilla and eggs, mixing until well combined.
  • Sprinkle in the baking powder, baking soda, and sea salt, then gradually add the flour until just combined.

Baking

  • Using a cookie scoop or your hands, roll the dough into large balls.
  • Roll the cookie balls in the additional granulated sugar and place them on the prepared baking sheets with enough space in between.
  • Optionally, sprinkle with sea salt flakes before baking.

Finishing

  • Bake in the preheated oven for about 10-12 minutes, or until the edges are slightly golden.
  • Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months. Thaw at room temperature before serving.
