Slow Cooker Greek Chicken

Ingredients
  

Main Ingredients

  • 2 lbs boneless skinless chicken breast or thighs Use whichever you prefer
  • 1 medium onion, thinly sliced
  • ¼ cup chicken broth
  • 1 medium lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced Toasting the garlic elevates the flavor
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme Can substitute with Italian seasoning
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions
 

Preparation

  • Place the chicken at the bottom of your slow cooker.
  • Add the sliced onion on top of the chicken.
  • In a small bowl, whisk together the chicken broth, lemon juice, garlic, olive oil, oregano, thyme, sea salt, and pepper. Pour this mixture evenly over the chicken and onions.

Cooking

  • Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until the chicken is tender and reaches an internal temperature of 165°F/75°C.
  • Once it’s cooked, shred the chicken with two forks right in the slow cooker to soak up the juices.

Notes

This dish can be served with rice, pasta, pita, or atop a Greek salad. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2-3 months. Reheat gently before serving.
