Basic Ingredients

  • 125 g butter (softened) Use unsalted butter for best results.
  • 1/2 cup white sugar
  • 1/2 cup brown sugar Packed tightly.
  • 1 egg Large egg at room temperature.
  • 1 tsp vanilla extract
  • 2 cups plain flour Sifted for best texture.
  • 2 Tbsp cornflour
  • 1 tsp baking powder
  • 1/2 tsp salt

Mix-ins (optional)

  • chocolate chips, dried fruits, nuts, or spices Choose according to your flavor preferences.

Preparation

  • In your stand mixer or a big bowl, whip butter and both sugars together on high speed until it’s light and fluffy.
  • Toss in the egg and vanilla; mix until it’s all combined.
  • Add flour, cornflour, baking powder, and salt, then mix on low speed carefully.
  • Fold in your chosen mix-ins.
  • Split the dough in half, roll each half into a log of about 20 cm long, wrap it in plastic wrap and chill for at least 2 hours.

Baking

  • Preheat your oven to 180°C/350°F.
  • Slice the chilled rolls into 1 cm thick cookies and lay them out on a lined baking tray.
  • Bake for 8-10 minutes until lightly golden.
  • Let them cool for 5 minutes before transferring to a rack.

Notes

Store in an airtight container for up to a week. You can freeze the dough for up to three months.
