  • 1/4 teaspoon ground nutmeg Optional.
  • 1 teaspoon lemon juice Prevents browning of apples.
  • 1 teaspoon pure vanilla extract Adds flavor.
  • Pinch fine sea salt Enhances flavors.

For the crisp topping

  • 3/4 cup old-fashioned rolled oats Provides crunch.
  • 1/3 cup almond flour Can substitute with finely ground almonds.
  • 1/4 cup chopped pecans or walnuts For added crunch.
  • 2 tablespoons coconut sugar or brown sugar For sweetness.
  • 1/4 teaspoon ground cinnamon To flavor the topping.
  • Pinch salt Enhances flavors.
  • 2 tablespoons coconut oil or unsalted butter, melted For moisture in the topping.
  • 1 tablespoon maple syrup Adds sweetness to the topping.

Optional for serving

  • Greek yogurt, vanilla skyr, or vanilla ice cream For serving.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and place a 10-inch oven-safe skillet on the stove over medium heat.
  • Add coconut oil or butter to the skillet. Once melted, stir in the apple slices, cinnamon, nutmeg, and salt. Cook for 5–7 minutes, stirring occasionally, until apples start to soften.
  • Add maple syrup, lemon juice, and vanilla. Cook for another 1–2 minutes until the syrup lightly coats the apples, then remove from heat.

Topping Preparation

  • In a bowl, combine oats, almond flour, nuts, coconut sugar, cinnamon, and salt. Add melted coconut oil/butter and maple syrup and toss with a fork until clumpy.

Baking

  • Sprinkle the oat mixture evenly over the apple layer without packing it down for a crunchy texture.
  • Transfer the skillet to the oven and bake for 10–12 minutes, until the topping is golden and the apples are bubbly.
  • Let it sit for 5 minutes to thicken before serving warm with a dollop of Greek yogurt or your preferred topping.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat in a skillet or 350°F oven for 8–10 minutes to revive the crunch. For make-ahead, slice apples up to 24 hours ahead and toss with lemon juice to prevent browning.
