  • 1 cup butter (softened) Make sure the butter is softened, not melted.
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour

Preparation

  • Preheat your oven to 325°F (162°C). Line two lightly colored baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer, combine butter, powdered sugar, vanilla extract, and flour. Mix on low speed until you get a crumbly dough.
  • Form the dough into a ball and roll it out between two sheets of parchment paper to about 1/3-1/2 inch thick. Cut into small 3-inch circles and place on the prepared baking sheets.

Baking

  • Bake for 12-15 minutes or until the bottoms are just barely golden brown.
  • Allow to cool for five minutes on trays before transferring to cooling racks.

Notes

Store in airtight containers for up to 5 days. For longer freshness, consider refrigeration or freezing.
