  • 1 cup butter (softened) Ensure it is soft, not melted
  • 3/4 cup powdered sugar Adjust to taste for sweetness
  • 1/2 teaspoon vanilla extract Can be substituted with plant-based option
  • 2 cups all-purpose flour Fluff before measuring

Preparation

  • Preheat your oven to 325°F (162°C). Line two lightly colored baking sheets with parchment paper.
  • In the bowl of a stand mixer, add the softened butter, powdered sugar, vanilla extract, and flour. Fluff your flour before measuring to avoid a dense mix.
  • Mix slowly until a crumbly dough forms. It will look like crumbs at first; squeeze it to see if it holds its shape.
  • Form the dough into a ball and roll it between parchment paper until it’s about 1/3 to 1/2 inch thick. Cut into small 3-inch circles or fun shapes.

Baking

  • Place the cut cookies onto the prepared baking sheets and bake for 12-15 minutes or until the bottoms are barely golden brown.
  • Cool on the baking trays for 5 minutes before transferring to cooling racks.

Notes

Store in airtight containers for up to 5 days. For longer storage, freeze them for up to three months and thaw at room temperature before serving.
