  • 1 pound sausage (Italian or other type)
  • 2 medium sweet potatoes, diced
  • 1 bunch kale, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon olive oil
  • to taste salt and pepper
  • optional red pepper flakes for heat

  • In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  • Add the sausage to the pot and cook until browned.
  • Stir in the diced sweet potatoes and cook for a few minutes.
  • Pour in the broth and bring to a boil. Reduce the heat and let it simmer for about 15 minutes until the sweet potatoes are tender.
  • Stir in the chopped kale and cook for an additional 5 minutes until wilted.
  • Season with salt, pepper, and optional red pepper flakes. Serve hot.

Notes

To store leftovers, let the soup cool completely before placing it in an airtight container. It will keep well for 3 to 4 days in the fridge or can be frozen for up to 3 months. For a thicker soup, blend a portion of it before adding the kale. Use a mix of sweet and spicy sausage for more flavor.
