  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Cooking

  • In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  • In the same pot, add onion, carrots, and celery. Sauté until softened.
  • Stir in garlic and cook for an additional minute.
  • Add diced potatoes and chicken broth. Bring to a boil and then reduce to a simmer.
  • Cook until potatoes are tender, about 15 minutes.
  • Lower the heat and return the sausage to the pot. Stir in the heavy cream and season with salt and pepper.
  • Simmer for another 5 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

Sausage Potato Soup is best served hot. It can be paired with crusty bread for dipping. To store, let it cool completely and transfer to an airtight container, refrigerate for up to 3 days or freeze for 2 months. Reheat on the stove.
