  • 2 medium medium summer squash (zucchini and/or yellow squash)
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese
  • to taste Fresh herbs (such as basil or thyme) for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the summer squash into 1/4-inch thick rounds.
  • In a large bowl, toss the squash with olive oil, salt, and pepper until evenly coated.
  • Arrange the squash on a baking sheet in a single layer.

Cooking

  • Roast in the preheated oven for 15-20 minutes until tender and slightly golden.
  • Remove from the oven and sprinkle with grated Parmesan cheese.
  • Return to the oven for an additional 5 minutes until the cheese is melted.
  • Serve warm, garnished with fresh herbs.

Notes

Slice evenly for even cooking, and feel free to experiment with different cheeses or herbs to suit your taste.
