Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together the flour, Parmesan cheese, salt, and pepper.
  • Dredge the chicken breasts in the flour mixture, shaking off any excess.

Cooking

  • In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  • Cook the chicken for 5-7 minutes on each side, until golden brown and fully cooked through.
  • Remove the chicken from the skillet and set aside on a plate to rest.
  • In the same skillet, add the remaining butter and minced garlic. Sauté for about 1 minute.
  • Add the lemon juice, stirring to combine and scrape up any bits stuck to the bottom.
  • Return the chicken to the skillet, and spoon the sauce over it.
  • Garnish with parsley and serve immediately.

Notes

Use pre-minced garlic for quicker preparation. Ensure chicken reaches an internal temperature of 165°F (75°C). For enhanced flavors, marinate chicken in lemon juice and olive oil for 30 minutes prior to cooking.
