Ingredients
  

Main Ingredients

  • 3 large eggs Fresh eggs are preferred.
  • 60 g reduced-fat cheese, grated You can use any cheese you love.
  • 1 tbsp passata Approximately 15g of tomato passata.
  • a few slices salami Alternatively, use pepperoni or turkey slices.
  • Mixed herbs, to top Basil or oregano can be used for extra flavor.

Instructions
 

Preparation

  • In a non-stick frying pan over medium heat, sprinkle half the grated cheese evenly across the pan and allow it to melt and get slightly crispy.
  • Crack the eggs into a bowl and whisk until smooth.

Cooking

  • Pour the whisked eggs over the melted cheese and cover with a lid. Cook until the bottom is firm and golden.
  • Carefully flip the cheesy egg base using a spatula.
  • Spread the passata on top of the cooked side, add salami slices, and sprinkle the remaining cheese. Cover again until the cheese melts and the toppings are heated through.

Serving

  • Remove from the pan, sprinkle with mixed herbs, and serve immediately.

Notes

Store leftovers in the fridge for up to 3 days in an airtight container or freeze for up to 2 months. Reheat in a pan over low heat.
