  • 1 box yellow cake mix
  • 20 oz can crushed pineapple (with juice)
  • 3 pieces eggs
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1/2 cup sweetened shredded coconut (optional)
  • 1/2 cup chopped nuts (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, sugar, melted butter, and vanilla extract. Mix until well combined.
  • If desired, fold in the shredded coconut and chopped nuts.
  • Pour the batter into the prepared baking pan.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Room temperature eggs work best for mixing. To reduce moisture, drain some juice from the pineapple. For easier slicing, chill the cake before cutting. Adding zest can elevate the flavor!
