  • 1 box yellow cake mix
  • 1 can crushed pineapple (with juice)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup shredded coconut (optional) Optional for enhanced tropical flavor
  • 1 cup chopped walnuts or pecans (optional) Optional for added texture

For the Frosting

  • 1 cup powdered sugar
  • 1/4 cup unsalted butter (softened)
  • 1-2 tablespoons milk Adjust for desired consistency
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  • In a large mixing bowl, combine the yellow cake mix, crushed pineapple (with juice), eggs, and vegetable oil. Mix until well combined.
  • Fold in the shredded coconut and chopped nuts, if using.
  • Pour the batter into the prepared baking pan and smooth the top.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the frosting by mixing together the powdered sugar, softened butter, milk, and vanilla extract until smooth.
  • Once the cake has cooled, spread the frosting over the top.
