  • 20 oz can crushed pineapple (with juice)
  • 3 pieces eggs Room temperature
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1/2 cup sweetened shredded coconut (optional)
  • 1/2 cup chopped nuts (optional) Skip if not preferred

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the cake mix, crushed pineapple (with juice), eggs, sugar, melted butter, and vanilla extract. Mix until well combined.
  • If desired, fold in the shredded coconut and chopped nuts.
  • Pour the batter into the prepared baking pan.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.

Serving

  • Serve warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream.
  • For added texture, sprinkle with toasted coconut.
