  • 1 tablespoon olive oil For cooking the chicken.
  • 1 medium bell pepper, diced Any color bell pepper works well.
  • 2 stalks green onions, chopped To garnish.
  • to taste salt and pepper Adjust to your preference.

  • In a large pan, heat olive oil over medium heat.
  • Add the diced chicken and cook until browned.
  • Stir in the bell pepper and cook for another 3-4 minutes.
  • Add the pineapple chunks, cooked rice, soy sauce, salt, and pepper.
  • Stir until everything is combined and heated through.
  • Garnish with chopped green onions and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days or frozen for 2-3 months. Reheat in the microwave or skillet with a splash of water to keep moist. For extra flavor, cook rice in chicken broth and consider adding peas or carrots.
