  • 1 pound boneless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil for cooking
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions
 

Preparation

  • In a large skillet, add the olive oil over medium-high heat.
  • Toss in the chicken pieces, season with salt, pepper, and garlic powder. Sauté until golden brown.
  • Stir in broccoli and cherry tomatoes. Cook for about 3 minutes until veggies are tender.
  • Lower the heat and add the heavy cream. Stir well until everything is coated.
  • Fold in the fresh spinach until it wilts.
  • Sprinkle with grated Parmesan cheese and serve.

Notes

This dish can be served over a bed of rice, with crusty bread, or garnished with fresh herbs. Keep leftovers in the fridge for up to 3 days or freeze for up to 2 months.
