  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 2 tsp cornstarch
  • 1/2 tsp cream of tartar
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/8 tsp ground cloves

Wet Ingredients

  • 3/4 cup unsalted butter, at room temperature
  • 3/4 cup packed light brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1/2 cup plain canned pumpkin (not pumpkin pie blend)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the flour, cornstarch, cream of tartar, baking soda, salt, and spices.
  • In another bowl, cream the butter, brown sugar, and white sugar until smooth and creamy.
  • Add in the egg, vanilla extract, and pumpkin. Mix until fully combined.
  • Gradually stir in the dry ingredients until just combined.
  • Scoop dough onto a lined baking sheet, spaced out.

Baking

  • Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
  • Let them cool slightly before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze for up to a month.
