Peanut Butter Chocolate Caramel Cookies

These chewy, nutty cookies filled with rich chocolate and gooey caramel are perfect for sharing (or keeping to yourself!).

Ingredients
  

Cookie Base

  • 2 cups old-fashioned oats
  • 1 cup creamy or chunky peanut butter Use your favorite type for unique flavor.
  • 4 tablespoons unsalted butter
  • ½ cup brown sugar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract

Toppings

  • 1 cup caramel sauce Store-bought or homemade.
  • 1 cup chocolate chips Melted.
  • sea salt Optional, for garnish.

Instructions
 

Create the Cookie Base

  • In a medium saucepan over medium heat, combine butter, brown sugar, and milk. Stir gently until the butter melts, and the mixture just starts to bubble. Once that sugar dissolves, remove it from heat and mix in the peanut butter and vanilla extract until it’s smooth.
  • Gradually add oats and stir until they’re evenly coated; it should be sticky!

Shape the Cookies

  • Using a tablespoon or a small cookie scoop, portion the oat mixture onto a parchment-lined tray.
  • Flatten each slightly using the back of a spoon, creating small indentations in the center of each cookie.

Add the Caramel Layer

  • Spoon about a teaspoon of caramel sauce into each indentation.

Drizzle the Chocolate

  • Melt chocolate chips in the microwave in 20-second bursts, stirring each time until smooth. Drizzle over the cookies.

Let Them Set

  • Chill cookies in the fridge for at least 30 minutes to firm up.

Notes

Store cookies in an airtight container at room temperature for up to a week or in the fridge for longer freshness. Let them sit out before enjoying.
