  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 4 cups vegetable broth Ensure it's gluten-free if needed.
  • 1 cup dairy-free cheese shreds
  • 1 cup coconut milk or other dairy-free alternative
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional) Use herbs like parsley or chives.

Cooking Instructions

  • In a large pot, add the diced potatoes, chopped onion, sliced mushrooms, vegetable broth, and minced garlic.
  • Bring to a boil and then reduce heat to a simmer, cooking until the potatoes are tender, about 15-20 minutes.
  • Use an immersion blender to blend the soup to your desired consistency, or transfer to a blender in batches.
  • Stir in the dairy-free cheese and coconut milk, mixing until the cheese is melted and the soup is creamy.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh herbs if desired.

Notes

To store, let cool before transferring to an airtight container. Use within 3-4 days in the fridge or freeze for up to 2-3 months.
