Ingredients
  

Base Ingredients

  • 2 cups diced leftover ham
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped

Liquids and Seasonings

  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions
 

Cooking the Soup

  • In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  • Add the diced potatoes and diced ham, stirring to combine.
  • Pour in the chicken broth and bring to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
  • Lower the heat and stir in the heavy cream and thyme. Season with salt and pepper to taste.
  • Serve hot and enjoy your cozy dinner!

Notes

Use different vegetables based on what you have on hand, like peas or corn. Adjust the thickness by using more or less heavy cream. For extra flavor, add a bay leaf while cooking and remove it before serving.
