One Pot Creamy Garlic Pasta

  • 8 oz pasta Any type of pasta can be used
  • 4 cloves garlic, minced
  • 2 cups milk Can substitute with almond or oat milk for a vegan option
  • 1 cup Parmesan cheese, grated Can substitute with nutritional yeast for a vegan option
  • 2 tablespoons butter Can substitute with vegan butter for a vegan option
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • In a large pot or skillet, melt the butter over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant.
  • Add the pasta and pour in the milk. Bring to a simmer, stirring occasionally.
  • Cook the pasta according to package instructions, stirring frequently, until al dente and the sauce is thickened (about 10-12 minutes).
  • Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  • Remove from heat and let it sit for a couple of minutes to thicken further.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For leftovers, store in an airtight container in the fridge for about 3-5 days, or freeze for up to two months. Add a splash of milk when reheating to restore creaminess.
