Ingredients
  

Dry Ingredients

  • 2 cups gluten-free all-purpose flour Make sure it contains xanthan gum or add 1 teaspoon separately
  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 tablespoon sugar or honey

Wet Ingredients

  • 1.5 cups warm water
  • 1 tablespoon olive oil

Preparation

  • In a large mixing bowl, combine the flour, salt, instant yeast, and sugar.
  • Slowly add the warm water and olive oil. Stir until just blended; it should look a bit shaggy and sloppy.
  • Cover the bowl with a kitchen towel and let it sit at room temperature for about 12–18 hours.

Baking

  • The next day, preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat up.
  • Once preheated, carefully remove the pot. Pour in the dough (don’t forget to grease it or line it!) and cover it with a lid.
  • Bake for 30 minutes with the lid, then remove the lid and bake for another 15 minutes until golden brown.
  • Let it cool before slicing.

Notes

For the best flavor and texture, do not rush the resting time. This bread is great for serving with soups or as a base for sandwiches.
