No Bake Oreo Cheesecake

Ingredients
  

Crust

  • 70 pieces Oreo chocolate cookie wafers (wafers from 35 cookies, filling removed & discarded) gluten-free, if necessary
  • 7 tablespoons unsalted butter, melted

Filling

  • ¼ cup lukewarm water
  • 1 packet unflavored powdered gelatin or 2 teaspoons if not using a packet
  • 2 8-ounce packages cream cheese, at room temperature
  • 1 cup sour cream, at room temperature
  • teaspoon kosher salt
  • 1 ½ cups confectioners' sugar, sifted
  • 18 pieces Oreo cookies gluten-free if necessary
  • 5 pieces Oreo cookies, broken or cut into quarters gluten-free if necessary
  • Fresh whipped cream for topping

Instructions
 

Preparation

  • Crush the Oreo wafers and mix them with melted butter before pressing them into your pan to form the crust.
  • In a mixing bowl, combine cream cheese, sour cream, confectioners' sugar, salt, and the gelatin-water mixture until smooth and creamy.
  • Fold in chopped Oreo pieces into the filling mixture.
  • Pour the filling over the prepared crust and then refrigerate for at least 4 hours until set.
  • Before serving, top with fresh whipped cream and extra chopped Oreo pieces.

Notes

This cheesecake can last about a week in the fridge. It can also be frozen for up to 3 months, just thaw overnight in the fridge before serving.
