Crust Ingredients

  • 1.5 cups gingerbread cookie crumbs
  • 1/4 cup unsalted butter, melted

Cheesecake Filling Ingredients

  • 16 oz cream cheese, softened Make sure at room temperature for smooth mixing.
  • 1/2 cup powdered sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup whipped cream Do not skip for fluffiness.

Preparation

  • In a bowl, combine gingerbread cookie crumbs and melted butter until it resembles wet sand.
  • Press the crumb mixture evenly into the bottom of your serving cups or glasses.

Making the Filling

  • In a separate bowl, beat the softened cream cheese and powdered sugar until it’s smooth and creamy.
  • Add ground ginger, cinnamon, and vanilla extract to the cream cheese mixture and mix well.
  • Gently fold in the whipped cream until everything is combined.

Assembling and Setting

  • Spoon or pipe the cream cheese filling over the crust in each cup.
  • Refrigerate for at least 2 hours before serving to let it set.

Garnishing

  • Garnish with extra spices or whipped cream if desired.

Notes

For best results, chill the cups longer and consider garnishing with mini gingerbread cookies. These cups stay fresh in the refrigerator for about 3–5 days.
