Ingredients
  

Main Ingredients

  • 8 oz mushrooms, sliced
  • 2 tablespoons olive oil or butter Use olive oil for a lighter version.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced Don't skip toasting the garlic.
  • 2 cups vegetable or chicken broth Water can be used in a pinch but may lose flavor.
  • 2 tablespoons soy sauce
  • 1 tablespoon flour (optional) Use for thickness if desired.
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Heat the olive oil or butter in a skillet over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and mushrooms; cook until the mushrooms are soft.
  • If using, sprinkle the flour over the mixture and stir to combine.

Cooking

  • Gradually add the broth and soy sauce, stirring constantly until the gravy thickens and smooths out.
  • Season with salt and pepper to taste.
  • Serve warm over mashed potatoes, roasted vegetables, or your favorite protein.
  • Garnish with fresh parsley if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the fridge or frozen for up to 3 months. Reheat gently on the stove.
