  • 2 cups Medium Cheddar Cheese Can substitute with pepper jack cheese.
  • 6 Eggs Whisking creates a fluffier texture.
  • 1 cup Whole Milk Can use cream or a dairy alternative.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions
 

Preparation

  • Spray the crock pot with cooking spray to help with cleanup.
  • Layer the frozen hash browns at the bottom of the crock pot.
  • Add the cooked ham or bacon on top of the hash browns.
  • Chop the onions and green peppers (or mushrooms) and sprinkle them over the meat layer.
  • Sprinkle the cheddar (or pepper jack) cheese on top.
  • In a bowl, whisk the eggs with milk, salt, and pepper until well combined.
  • Pour the egg mixture over everything in the crock pot.

Cooking

  • Cover the crock pot and cook on low for 6-8 hours or high for 4 hours.

Notes

You can customize the recipe by switching out veggies and meats. It's ideal to set it up to cook overnight if busy. For an even fluffier texture, shred cooked breakfast before serving. Serve with extra cheese or hot sauce if desired.
