  • 8 ounces spaghetti Any pasta shape will work, just adjust cooking time.
  • 4 tablespoons olive oil For sautéing garlic.
  • 2 cloves garlic, minced Don't skip toasting the garlic for better flavor.
  • 1/4 teaspoon red pepper flakes Add more for extra spice if desired.
  • 1 cup heavy cream For creaminess.
  • 1/2 cup grated Parmesan cheese Can be substituted with Pecorino Romano or vegan alternatives.
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish Adds color and freshness.

Cooking

  • Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, sautéing until fragrant.
  • Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth.
  • Add the cooked spaghetti to the skillet, tossing to coat well with the sauce. Season with salt and pepper to taste.
  • Serve immediately, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat with a splash of cream. For vegan variation, use coconut cream and nutritional yeast.
