  • 4 cups chicken or vegetable broth Use low-sodium for a healthier option.
  • 8 cloves garlic, minced Adjust based on your garlic preference.
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder Can adjust to taste.
  • 1 tablespoon olive oil For sautéing.
  • 1 small onion, chopped Yellow or white onion works well.
  • Salt and pepper to taste

Garnishes

  • Chopped fresh cilantro For garnish.
  • Lime wedges For serving.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  • Toss in the minced garlic, cumin, and chili powder, and sauté for another 1-2 minutes until fragrant.
  • Pour in the chicken or vegetable broth and bring to a simmer.
  • Season with salt and pepper to taste, and let it simmer for about 15 minutes.

Serving

  • Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For extra creaminess, blend half the soup before serving. To increase heat, add cayenne pepper or diced jalapeños. Adjust thickness with cornstarch mixed with water if desired. Can use vegetable broth for a vegan option.
