  • 1.5 lbs Chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tbsp Extra virgin olive oil, divided for cooking
  • 2 medium Zucchini, sliced into half-moons
  • 2 pcs Red bell peppers, diced into chunks
  • 1 large Red onion, sliced into strips
  • 2 cups Cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves Garlic, minced
  • 1/4 cup Sun-dried tomatoes, chopped
  • 2 tsp Dried oregano
  • 1 tsp Dried basil
  • 1/2 tsp Dried thyme
  • 1 pcs Lemon, juiced
  • 0.5 cup Feta cheese, crumbled Optional topping
  • 2 tbsp Fresh parsley, optional garnish

Instructions
 

Preparation

  • Prep ingredients and chop everything before cooking.

Cooking

  • Sear chicken in a skillet over medium heat with 2 tablespoons of olive oil until golden and cooked through (about 6-7 minutes).
  • Sauté onions, garlic, and vegetables in the same pan, adding the zucchini and red bell peppers first until tender—about 5 minutes.
  • Combine chicken and vegetables, season with salt, pepper, oregano, basil, and thyme, then toss everything together.
  • Add lemon juice, olives, and feta, gently mix, and serve warm.

Notes

For an extra layer of flavor, marinate the chicken in olive oil, lemon juice, and spices for at least 30 minutes before cooking. You can swap the veggies for asparagus or broccoli. For added crunch, toss in some toasted pine nuts right before serving. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
