Ingredients
  

For the Meatloaf

  • 1 lb ground beef
  • 1/2 cup breadcrumbs Use seasoned breadcrumbs for added flavor.
  • 1/4 cup diced onion
  • 1 egg
  • 1/4 cup milk Add a splash when reheating mashed potatoes to maintain creaminess.
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup shredded cheese Use cheddar or your choice.

For the Mashed Potatoes

  • 2 cups mashed potatoes Prepare according to your recipe or package instructions.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, breadcrumbs, onion, egg, milk, Worcestershire sauce, salt, and pepper. Mix until just combined.
  • Shape the mixture into a loaf and place it in a greased baking dish.

Baking

  • Bake for 45-60 minutes or until the internal temperature reaches 160°F (70°C).
  • While the meatloaf bakes, prepare the mashed potatoes according to your recipe or package instructions.
  • Once the meatloaf is done, remove it from the oven and top it with shredded cheese.
  • Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.

Serving

  • Serve slices of meatloaf alongside the mashed potatoes.

Notes

Leftovers can be stored in the fridge for 3-4 days. Freeze portions for up to 3 months. Reheat in the microwave or oven, adding a splash of milk to the potatoes if needed. Consider adding diced bell peppers or mushrooms for extra veggies.
